Looking for that something different with a little kick to start dinner off with? Well give this appetizer a try; you may just love this dish. Taco flavored snow goose with onions and tomatoes infused with spicy cumin and chili seasoning topped with guacamole.
Here is what you’re going to need to get started:
- sheet puff pastry (defrost prior to cooking)
- 1 cup freshly ground snow goose meat
- 1/2 cup diced tomatoes
- 1/2 cup diced onions
- 3 green diced onions
- 1 cup shredded Mexican cheese
- 1 avocado
- 1 tablespoon cumin
- 1 teaspoon chili pepper
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 egg beaten with just a teaspoon of water for an egg wash
Cook the ground snow goose meat in large skillet on medium-high heat. When meat has browned and don’t forget do not overcook the snow goose, mix in the diced tomatoes, diced onion and diced green onions. To this mix add your cumin, chili pepper, garlic powder and salt. Cook on low heat for 5 minutes. Remove from heat and allow to cool. Next preheat your oven to 400 degrees.
Once the meat has cooled, stir in your Mexican cheese. Place pastry sheet on floured cutting surface. Take meat mixture and add on top of the pastry spreading out evenly. Begin to roll meat and pastry forming a pinwheel. Using a sharp knife cut pastry roll into 1 inch rounds. Place pinwheel rounds non stick cookie sheet. Brush the outer edges of pastry with egg wash.
Place in oven and cook for 8 to 10 minutes or until pastry has browned. Remove from oven and serve garnished with guacamole, diced green onion and maybe a few tomatoes.
This little recipe should be a smash at your next get together or Cinco De Mayo party and a good way to reduce all of that snow goose meat that you got last spring on the snow goose hunting trip.
